Coconut-Peanut Butter Bars:

  • 1 cup sugar
  • 1/2 cup Jif Peanut Butter
  • 6 tablespoons butter or margarine, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup flaked coconut confectioners' icing
  • Preheat oven to 350?F.
  • Create a creamed mixture of sugar, Jif and butter or margarine.
  • Add eggs and vanilla; beat well.
  • Stir together flour, baking powder and salt; add to creamed mixture.
  • Beat just till well mixed.
  • Stir in coconut.
  • Spread in greased 11 x 7 x 1 1/2-inch baking pan.
  • Bake in 350?F oven for 25 to 30 minutes.
  • Cool. Cut into bars.
  • Drizzle with confectioners' icing.
  • Makes 2 dozen.
